Tomato and avocado pasta

INGREDIENTS

  • 1 package  SOW CHIA PASTA  🛒 Buy Now
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 jar, sun-dried tomatoes
  • Salt and pepper to taste
  • 2 ripe avocados, diced
  • ¼ c basil leaves
  • 2  tbsp of  SOW CHIA OIL  🛒 Buy Now
  • 2c Parmesan cheese

DIRECTIONS

  1. Cook pasta according to the directions on the package. 
  2. In a large skillet over medium-high heat, heat the butter. Add cooked pasta, tomatoes, salt, pepper, and stir.
  3. Transfer to a large bowl.  Add the avocado cubes, basil leaves, and combine.
  4. Plate and garnish with chia oil and Parmesan cheese.
