Heat the pan over medium-high heat and add the chia oil until the surface is covered. Sauté the carrots for about 2-3 minutes.
Next, add the bell pepper, zucchini, squash, basil, oregano and garlic powder. Sauté for 2-3 more minutes, or until the vegetables begin to soften.
Remove the pan from the heat, season with salt and pepper. Garnish with chopped fresh parsley just before serving
