Pasta with Spinach and mushrooms


  • 8 oz Pasta
  • ¼ cup olive oil
  • 1 medium onion
  • 2 garlic cloves
  • 7 oz (200 g) sliced mushrooms
  • 2 oz (60 g) baby spinach
  • Salt and pepper to taste

  • 3.5 oz (100 g) grated vegan Parmesan cheese


  1. Bring a large pot three-fourths full of salted water to a boil over high heat. Add the pasta, stir well and cook until al dente, about 11 minutes. Drain the pasta and reserve it.
  2. In a frying pan or a wok over medium-low heat, warm the olive oil. Add the onion and garlic and sauté until the onion is transparent about 5 minutes. Add salt and pepper to taste, stir in the spinach and mushrooms and sauté until the spinach is wilted and the mushrooms are darker. Set aside.
  3. Add the pasta to the sauce and toss to combine. Add as much of the cooking water as needed to loosen the sauce. Warm briefly over low heat to blend the flavors. After warming, add the SOW CHIA OIL.
  4. Serve immediately and pass the cheese at the table.
