Chia eggs, chia egg, vegan egg or also known as soaked or activated chia seeds is a preparation that can be used in confectionery as a binder, emulsifier, thickener or stabilizer. The preparation of 1 tablespoon of seeds replaces 1 chicken egg.
INGREDIENTS
1 tablespoon chia seeds
¼ cup water
DIRECTIONS
Combine the chia seeds with water and mix thoroughly.*
Let rest for about 5 minutes so that the chia seeds thicken and become gelatinous.
Notes
If you want to grind the chia seeds, you can do this in a blender. However, this requires you to make at least 1 cup.
To get thicker quicker, you can chill it for 5-10 minutes more.
