Vegan Soup

INGREDIENTS

  • 1 tablespoon olive oil
  • ½ cup onion, diced
  • ½ cup carrot, diced
  • ½ cup celery, diced
  • 1 ½ cloves garlic, minced
  • 2 potatoes, peeled and cut into 1-inch pieces
  • 1 cup unsweetened chia milk
  • 2 cups water
  • Salt & pepper

 

DIRECTIONS

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, celery, and garlic; cook and stir until soft, about 10 minutes. 
  2. Add potatoes, water, and salt. Bring to a boil; reduce heat and simmer until potatoes are very tender, 10 to 15 minutes.
  3. Remove pot from the heat and puree soup in a blender. Add chia milk and stir.
  4. Return soup to the heat and cook until heated through, about 5 minutes. Season with salt and pepper.
