Keto bread with chia and almond flour in bread machine

INGREDIENTS

  • 1 cup (8.1 Oz) warm water
  • 1/2 cup (1.45 Oz) oat fiber
  • 2/3 cup (2.46 Oz) SOW® chia flour
  • 2 1/3 cup (8.61 Oz) almond flour
  • 2 eggs at room temperature
  • 1 teaspoon (0.21 Oz) sea salt
  • 2 teaspoons (1.05 Oz) soft butter
  • 1 spoonful (0.28 Oz) dry yeast (not instant yeast)

DIRECTIONS

  1. Pour the water into the bowl that goes inside the bread machine.
  2. Add the oat fibers, SOW chia flour, almond flour, and the beaten eggs, in this order.
  3. Sprinkle the salt evenly on the sides around the previously added ingredients.
  4. If you want your bread to have a slightly sweet flavor, you can add just a little powder of your favorite sweetener. The first time you bake this ketogenic bread, try to prepare it without sweetener or just very little of it. If you use some sweetener to sweeten your bread, then sprinkle it evenly on the sides around the ingredients you already put in the bowl.
  5. Cut the butter into cubes and distribute these on top of the ingredients already present in the bread machine bowl. It is important for the butter to be soft and at room temperature.
  6. Make a little hole in the center of the flour (without reaching the bottom down to the water), pour the yeast into the hole. Make sure the yeast does not touch the salt, the sweetener nor the water.
  7. Place the bowl inside the bread machine and switch on the machine. Use the settings desired for your bread. We recommend the settings for a medium-sized bread loaf and medium-dark color.
  8. Now let the machine do its magic! Your bread will be ready in approximately 3 hours.
  9. Leave the bread to cool. Once it's cold, take the loaf out of the bowl and cut it into slices.
