In a large bowl, stir together the dry ingredients (brown sugar, all-purpose flour, SOW chia flour, baking soda, clove, cinnamon, and salt).
Add the oil, whole eggs, and vanilla extract into the mix. Stir with a wooden spoon.
Incorporate the apples, nuts, and chia seeds and mix everything.
Spoon the batter into the prepared muffin cups or paper liners, filling each cup about three-fourths full.
Bake until a toothpick inserted into the center of a muffin comes out clean, 40 to 50 minutes.
